නිර්මාංශත්වය ගැන ඔබ දැනුවත් ද?
නිර්මාංශත්වය යනු ශාකමය අමුද්‍රව්‍ය වලින් සාදන ලද ආහාර අනුභව කිරීමේ ආහාර පිළිවෙතකි. අතීතයේ සිටම නිර්මාංශ ආහාර පිළිවෙත් පැවත ගෙන එන අතර ඒවා බොහෝ විට පැරණි ආගමික පද්ධති සමඟ සම්බන්ධ වී පවතී. පුරාණ ඊජිප්තු ශිෂ්ටාචාරයේ, නිර්මාංශ ආහාර අනුභව කිරීම ආරම්භ කර ඇත්තේ මාංශ පරිභෝජනය මඟින් පුනරුත්පත්තිය පහසු කරනු ඇතැයි යන විශ්වාසය මතය. මේ වන විට මාංශ පරිභෝජනය අඩු කිරීම මඟින්, සෞඛ්‍යමය ප්‍රතිලාභයන් ළඟා කර ගත හැකි බවට විද්‍යාත්මකව ද සොයා ගෙන ඇති අතර මෙම කරුණු ගෝලීය වශයෙන් නිර්මාංශත්වය ශක්තිමත් වීමටත් ඊට යොමුවන්නන්ගේ සංඛ්‍යාව වැඩි වීමටත් හේතු වී ඇත.
මේ වන විට නිර්මාංශ ආහාර වේල් කිහිපයක් හඳුනා ගෙන ඇති අතර ඒවා නම් lacto vegetarian diet, ovo-vegetarian diet, lacto-ovo-vegetarian diets, pestcatarian diets සහ vegan diets වේ.
Lacto vegetarian ආහාර වේලකට කිරි, චීස්, යෝගට්, බටර් වැනි කිරි ආශ්‍රිත නිෂ්පාදන අයත් වන අතර මස්, මාළු, කුකුළු මස් (poultry) සහ බිත්තරද ඒවා අඩංගු ආහාරද ඇතුළත් නොවේ.
Ovo-vegetarian ආහාර වේලකට බිත්තර ඇතුළත් නමුත් මස්, කුකුළු මස්, මුහුදු ආහාර (sea food) සහ කිරි නිෂ්පාදන ඇතුළත් නොවේ.
Lacto-ovo vegetarian ආහාර වේලකට කිරි නිෂ්පාදන සහ බිත්තර ඇතුළත් නමුත් මස්, මාළු සහ කුකුළු මස් වැනි ආහාර ඇතුළත් නොවේ.
Pestcatarian ආහාර වේලකට මාළු ඇතුළත් නමුත් මස්, කුකුළු මස්, කිරි සහ බිත්තර ඇතුළත් නොවේ.
Vegan ආහාර වේලකට මස්, කුකුළු මස්, මාළු, බිත්තර සහ කිරි නිෂ්පාදන මෙන්ම ඒවා අඩංගු ආහාර කිසිවක් ඇතුළත් නොවේ.
සාමාන්‍යයෙන් නිර්මාංශ ආහාර වේලෙහි ස්වභාවිකවම තන්තු බහුල රනිල කුලයට අයත් ධාන්‍ය වර්ග, පලතුරු, එළවළු, ඇට වර්ග, බීජ වැනි ආහාර අඩංගු වේ. අධික තන්තු අන්තර්ගතය නිර්මාංශිකයින් අතර හෘද රෝග, දෙවන වර්ගයේ දියවැඩියාව, වකුගඩු ගල් සහ සමහර පිළිකා වැළැක්වීමට උපකාරී වේ. ඊට අමතරව නිර්මාංශිකයින්, විශේෂයෙන් කාන්තාවන්, යකඩ ඌනතාවය ඇති වීම වළක්වා ගැනීම සඳහා සැලකිලිමත් විය යුතුය, මන්ද එය ඔවුන්ගේ සෞඛ්‍යයට බලපාන පෝෂණ ගැටලුවක් විය හැකි බැවිනි. සාමාන්‍යයෙන් ආහාර වල යකඩ වර්ග දෙකක් අඩංගු වේ. ඒවා හීම් කාණ්ඩක් රහිත යකඩ සහ හීම් කාණ්ඩයක් සහිත යකඩ වන අතර, හීම් කාණ්ඩයක් සහිත යකඩ යනු වඩාත් පහසුවෙන් අවශෝෂණය කළ හැකි යකඩ ආකාරයයි. තවද බොහෝ ශාක ආහාර වල යකඩ අඩංගු වන නමුත් ඒවා අඩු අවශෝෂණ හැකියාවකින් යුත් හිම් නොවන ආකාරයෙන් පවතී.
එම නිසා නිර්මාංශිකයින් ආහාර ගැනීමේදී යකඩ බහුල රනිල කුලයට අයත් ධාන්‍ය වර්ග, කොළ පැහැති එළවළු සහ ඇට වර්ග වැනි ආහාර සමඟ යකඩ අවශෝෂණය වැඩි කරන පැඟිරි, ස්ට්‍රෝබෙරි, තක්කාලි, මාළු මිරිස්, බ්‍රොකොලි, ගෝවා, නිවිති, වැනි විටමින් සී බහුල ආහාර තම ආහාර වේලට එක් කර ගැනීමට සැලකිලිමත් විය යුතුය. මන්ද, ඇස්කෝර්බික් අම්ලය (විටමින් C) ශාක ආහාර වල ඇති හීම් කාණ්ඩයක් රහිත යකඩ අවශෝෂණය වැඩි දියුණු කරන බව පෙන්වා දී ඇත.
එමෙන්ම රතු වයින්, කෝපි, කොකෝවා, තේ සහ පෙපර්මින්ට් තේ වැනි ශාකසාර තේ වල දක්නට ලැබෙන ශාක වල ඇති පොලිෆීනෝල් කාණ්ඩයට අයත් ටැනින්, හීම් කාණ්ඩයක් රහිත යකඩ සමඟ සම්බන්ධ වීම මඟින් යකඩ අවශෝෂණය අඩු වීම සිදු වේ. ඒ නිසාම සෞඛ්‍යමය ප්‍රතිලාභ ඇතත්, නිර්මාංශිකයින් ආහාර ගැනීමේ දී ටැනින් හෝ පොලිෆීනෝල් අඩංගු තේ, රතු වයින්, කෝපි සහ කොකෝවා පානය කිරීමෙන් වැළකී සිටීමට උත්සාහ කළ යුතුය. තවද, Ca සහ Zn වැනි ඛනිජ ලවණ අධික ලෙස ආහාරයට ගැනීම ද යකඩ අවශෝෂණය අඩු කිරීමට බලපායි.
සත්ත්ව ආහාර ප්‍රභවයන් වන මාංශ, මාළු, කිරි සහ බිත්තර වැනි ආහාර වල සෑම අත්‍යවශ්‍ය ඇමයිනෝ අම්ලයක්ම අවශ්‍ය ප්‍රමාණයෙන් අඩංගු වේ. එබැවින් ඒවා සම්පූර්ණ ප්‍රෝටීන් ප්‍රභව ලෙස සැලකේ. කෙසේ වෙතත්, බොහෝ ශාක ප්‍රෝටීන් ප්‍රභවයන් වල මෙම අත්‍යවශ්‍ය ඇමයිනෝ අම්ල සියල්ලම අඩංගු නොවිය හැක. එම නිසා ඒවා අසම්පූර්ණ ප්‍රෝටීන් ප්‍රභවයන් ලෙස සැලකේ. නිර්මාංශ ප්‍රෝටීන් ප්‍රභවයන් අසම්පූර්ණ ප්‍රෝටීන වීමට වැඩි ඉඩක් තිබුණද, රනිල කුලයට අයත් බෝග, ධාන්‍ය, ඇට වර්ග සහ බීජ වැනි ප්‍රෝටීන් ප්‍රභවයන් මිශ්‍ර කර ගලපා ආහාරයට ගැනීමෙන් ඔවුන්ගේ ශරීරයට අවශ්‍ය සියලුම ඇමයිනෝ අම්ල ලබා ගත හැක. එසේම එම අත්‍යවශ්‍ය ඇමයිනෝ අම්ල වල සමතුලිතතාවයක් පවත්වා ගැනීම වැදගත් වේ.
එම නිසා සියලුම වර්ග වල නිර්මාංශිකයින් ප්‍රෝටීන්, අත්‍යවශ්‍ය මේද අම්ල, ඛනිජ ලවණ (යකඩ, සින්ක්, අයඩින්, කැල්සියම්) සහ විටමින් (විටමින් D සහ B 12) ඇතුළුව ඔවුන්ට අවශ්‍ය සියලුම පෝෂ්‍ය පදාර්ථ ලබා ගැනීම ඉතාමත් වැදගත් කරුණකි. නිර්මාංශිකයෙකු වීමේ ප්‍රධාන සෞඛ්‍යමය අවාසිය නම් පෝෂක ඌනතාවයන් ඇති වීමේ විභවයයි. එබැවින් හොඳින් සැලසුම් කල සමබල ආහාර වේලක් ගැනීම සහ අවශ්‍ය සියලුම පෝෂ්‍ය පදාර්ථ ලබා දෙන ආහාර වේලක් ලබා ගැනීම සඳහා ආහාර තෝරා ගැනීමේදී නිර්මාණශීලී වීම වඩාත් වැදගත් වේ.

•Vegetarianism is a dietary practice of eating foods that are made of plant sources.Vegetarian diets are frequently associated with ancient religious systems. Ancient Egyptian civilization have started consuming vegetarian diets based on the belief that meat consumption would facilitate reincarnation. At present it has scientifically discovered that there are several health benefits associated with the reduction in meat consumption.These factors have strengthened vegetarianism globally and drawn an increasing number of followers.
•At the moment there are several types of vegetarian diets have been identified.They are lacto-vegetarian diets, ovo-vegetarian diets, lacto-ovo-vegetarian diets, pestcatarian diets and vegan diets.
-Lacto-vegetarian diets are included dairy products, such as milk, cheese, yoghurt, butter and excluded meat, fish, poultry and eggs, as well as foods that contain them.
-Ovo-vegetarian diets are included eggs but excluded meat, poultry, seafood and dairy products.
-Lacto-ovo vegetarian diets are allowed dairy products and eggs but meat, fish and poultry are not allowed.
-Pescatarian diets are allowed fish but meat and poultry, dairy, and eggs are not allowed.
-Vegan diets are excluded meat, poultry, fish, eggs and dairy products, as well as foods that contain these products.
•Generally vegetarian diets contain legumes, whole grains, fruits, vegetables, nuts, seeds and they are naturally high in fiber. The high fiber content has helped to prevent heart disease, type 2 diabetes, kidney stones and some cancers among vegetarians.Other than that vegetarians, especially women, may need to take extra precautions to prevent iron deficiency, because it can be a nutritional problem for their health. Generally food contains two types of iron, non-haem iron and haem iron and also haem iron is the more readily absorbable form of iron.And many plant foods also contain iron, but it is in the non-haem form which is less absorbable.
•Because of that vegetarians should take care to combine plenty of iron-rich foods like legumes, wholegrain cereals, green vegetables and nuts, with the foods such as citrus fruits, strawberries, tomatoes, capsicum, broccoli, cabbage, spinach that enhance iron absorption in their diets. Because ascorbic acid (vitamin C) has been shown to enhance the absorption of the non-haem iron found in plant foods.
•Tannins in plants that belong to the group of polyphenols, found in red wine, coffee, regular tea, and herbal teas like peppermint tea, can tie-up to the non-haem iron, by reducing its absorption. Because of that, even though they have health benefits, vegetarians should try to avoid drinking strong tea, red wine, coffee and cocoa which contain tannins or polyphenols at meal times. Excessive intake of Ca and Zn like minerals can also effect in reducing the absorption of iron.
•Animal products like beef, fish, dairy, and eggs are rich in all essential amino acids. Thus, they're considered as complete proteins. Although, many plant sources of protein are lack of one or more essential amino acids. Because of that they're considered as incomplete protein sources. Even though vegetarian sources of protein are more likely to be incomplete proteins, mixing and matching of protein sources such as legumes, grains, nuts and seeds can help to get all the amino acids that human body needs. Maintaining a balance of those essential amino acids is a must.
•The most important thing for all kind of vegetarians is to ensure that they are getting all the nutrients they need including protein, essential fatty acids, minerals( Fe, Zn, l, Ca ) and vitamins(vitamin D and B12).
•The major health disadvantage being a vegetarian is a potential of nutrient deficiencies.So it is important to maintain a well-planned balanced diet and being creative when eating to get all the nutrients needed.
